Oatmeal Chocolate Chip Cookies

The coconut oil and wheat flour is what makes these chocolate cookies extra special. You can make the recipe with all butter instead of coconut oil but I definately would try coconut oil at least once. some brands of coconut oil have a stronger flavor than others and you definitely want coconut oil that has a good coconut flavor.

These cookies have a well rounded flavor and texture. They are not too sweet and soft. A little chewy, hearty, and the walnuts give a nice crunch! I love that they have a variety of flavors they are not just sweet all the way through.

Oatmeal Chocolate Chip Cookies


1 cube plus 6 tbs butter 

2 Tbs coconut oil

1 cup brown sugar

1 cup white sugar

2 eggs

1 teaspoon vanilla

2 ½ -3 cups white flour

2/3 cup wheat flour

1 teaspoon salt

1 teaspoon soda

½  teaspoon baking powder

1 cup old fashioned oatmeal

½ cup nuts (toasted walnuts are my preference)

chocolate chips or chocolate chunks


Cream butter, oil, sugar, and brown sugar

Add eggs and vanilla 

Whisk together soda, salt, baking powder, flour, and oatmeal.

Stir gradually into wet ingredients

Stir in walnuts and chocolate chips

Form on cookie sheet with parchment paper @350 for 10-15 minutes


PS. I like to press a few chocolate chips on top after I have formed the cookie dough so you can see the melty chocolate when they come out of the oven!
